As for best PvE weapons, you won't have access yet to what I'd consider the two best choices, Drakeblood Greatsword and Red Iron Twinblades. Given where you are, your choices will depend on playstyle. If you're comfortable with Ultras, the Greatsword can be great.I prefer to two hand the Rapier. Over time you do about 20% less damage in a power stance. The advantage over the power stance is that it makes it easier to get stunlocks in certain cases. General rules on infusions. Never had to change it. So Ricards has the best dex scaling but medium base dmg, while the Espada has great dex scaling as well and higher base dmg. I honestly don't know at which point the scaling of Ricards outclasses the Espada. I would advice Ricards anyway, because I don't like that the on handed Strong attack of the Espade is a parry.
